Apple and cinnamon cake

This has become one of my favourite recipes during the festive months because the combination of spiced apple and cinnamon literally smells like Christmas!
Originally I took inspiration for this from Áine Carlin, however I have been experimenting with different flavour combinations, for example, the first time I made it I had no nutmeg or baking powder, but it still came out just as delicious!
It's a very quick and simple cake to bake, and great if you're short of time. It works perfectly as a dessert or as a little treat with your cup of afternoon tea. I recommend serving with sliced banana, pecan nuts or almonds, and either a drizzle of caramel sauce or a little whipped vegan cream. Enjoy the sweet treat!
INGREDIENTS:
3-4 large apples (peeled and chopped)
2 cups flour
1 cup + 1 tbsp light brown sugar
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 pinch of salt
1/4 cup olive oil
4 tbsp vegan butter (melted)
1/4 cup lukewarm water
Preheat the oven to around 180°C/350°F/ Gas mark 4. Grease a cake tin or baking tray (or line with greaseproof paper).
Mix the chopped apple with the cinnamon, nutmeg and 1 tbsp light brown sugar.
In a separate large mixing bowl, whisk the flour and baking powder together. Add the remaining ingredients (except the chopped apple) and fold together gently until combined.
Stir through the chopped apple until evenly mixed. Spread the mixture into the cake tin ensuring it is spread to the edges.
Dust with a little brown sugar, cinnamon and nutmeg, then bake for 35 - 40 minutes. Leave to cool before cutting.
