Green smoothie

Another one from Áine Carlin's 'Keep it Vegan'. I'm a big fan of green smoothies, and I'm always on the lookout for different versions. Although they may not always look or sound appealing, this one has the perfect blend of fruit and veg - you'll be surprised how great it tastes!

INGREDIENTS:

 

100g kale, chopped (remove the hard stalks)

1 celery stick, chopped

7.5cm piece of cucumber, peeled & deseeded

2 apples, peeled, cored & chopped

3 medjool dates, stoned

1 tsp ground cinnamon

Juice of 1 lime & juice of 1/2 a lemon

3-4 ice cubes

Place all of the ingredients in a blender. Add 180ml cold water and blend until completely smooth, adding a little more water if needed. 

Divide equally between two tall glasses and serve over ice, et voilà!
