Summer berry fruit salad

What better way to enjoy a warm summer picnic than with a delicious and nutritious summer fruit salad! It's an ideal way to experiment with different fruits depending on what's in season, kiwi, pineapple and grapes are all great additions. It's a quick and easy dessert to throw together, and makes a great addition to any summer picnic or barbecue. Jazz it up a little by serving with a scoop of vegan ice cream or a drizzle of vegan cream.

INGREDIENTS:

 

1 cup blueberries

1 cup raspberries

1 cup strawberries

1/2 cup blackberries

2 cups watermelon

2 tbsp freshly squeezed lime juice 

After rinsing the fruit with water, halve the strawberries and add to a large serving bowl with the blueberries, raspberries and blackberries. 

Chop the watermelon into cubes and add to the bowl. Ensure all the fruits are mixed and evenly distributed.

Add the freshly squeezed lime juice and serve with a scoop of vegan vanilla ice cream and your favourite summer drink.
