Vegan chocolate chip pecan cookies

This recipe comes from one of my favourite vegan cook books: 15 Minute Vegan by Katy Beskow. These chocolate chip vegan cookies are “melt in your mouth” delicious and they’re so quick and easy to make! They take less than 10 minutes and require no baking. Perfect as a little sweet treat.
Tip - if you can't find vegan chocolate chips, use a dark chocolate bar such as Cadbury's Bournville (which is vegan) and chop a couple of squares into small cubes. I've also been experimenting with different flavours and find a little ground cinnamon or nutmeg tastes delicious. You could also try drizzling some of this salted caramel sauce over them as an extra sweet treat!
INGREDIENTS:
1 rounded tbsp vegan butter
2 tbsp soft brown sugar
1 tsp vanilla extract
1 tbsp pecan nuts
4 tbsp plain flour
1 tbsp vegan chocolate chips
Melt the butter in a microwave safe bowl for 30 seconds.
Stir the brown sugar, vanilla extract, pecan nuts & plain flour into the melted butter to form a dough. Stir through the chocolate chips.
On a microwaveable plate, spoon the mixture into small cookie shapes, microwave for 1 min 30 seconds until cooked.
