Vegan red pesto

This super-quick red pesto with sun-dried tomatoes and basil is from Hurry The Food Up. I can't remember how I originally came across this recipe but it makes for a really great alternative to shop-bought pesto, and it's vegan! I like to keep a supply of empty jars in the cupboard so I can make up large batches of this and give away as gifts. It really is very easy to make as long as you have a food processor or hand blender.
I like to spread it on a little crusty bread, use as a pizza base or stirred through some freshly cooked pasta. Enjoy!
INGREDIENTS:
½ cup sun-dried tomatoes in oil
2 cloves garlic

½ cup cashews
3 tbsp olive oil (less if you're using the oil from the tomatoes)
10 tbsp water
Salt & pepper to taste
1 clean jar with a lid

Optional ingredient:

If you want an extra kick add a red chilli
Throw all of the ingredients into a food processor or use a bowl and hand blender to mix.

Blend the ingredients together until you have a smooth paste.

Pour the mixture into a clean jar and refrigerate.
