Warm breakfast oats
This is my absolute go-to breakfast recipe on a cold winter morning. As a treat I often eat this in bed with a mug of warm tea. There's just something really comforting about a bowl of warm oats in the wintertime. It's the ideal breakfast before I head out for a long morning run, as it gives me just the right amount of fuel and energy.
I like to serve it with bananas but you could use other fruits such as blueberries or strawberries.
1 cup oats
2 tbsp walnuts
1/2 cup plant milk
1 tsp chia seeds
1-2 tsp soft brown sugar (optional)
In a breakfast bowl, add the oats and chia seeds, then pour the plant milk in and mix together. Add in a little soft brown sugar if you'd like to make it a bit sweeter.
Blitz in the microwave for 60-90 seconds (or until warm enough), adding a little more plant milk if needed.
Serve with sliced banana on top and a handful of chopped walnuts.
